Carrot Cake and Tea, Yummmm!

Do you ever see gorgeous photos of cakes so perfectly illustrated?
Several times recently I have tried to make a cake like I saw in those beautiful photos.
This one I am calling my "perfectly imperfect" cake.
It tilted to one side.  The icing didn't go on so perfectly either.
It was the best tasting carrot cake I have had in a long time.
So here it is my perfect carrot cake recipe for you.

Carrot Cake
Combine:
4 beaten eggs
1 1/2 cups cooking oil
Sift and Add:
2 cups sugar
2 cups flour
2 1/2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
Add: 
4 cups grated carrots
1 cup chopped walnuts

Preheat oven to 350 degrees.
Grease and flour 1 round cake pans.
Bake about 30-45 minutes until done.
Frost with cream cheese frosting.

Cream Cheese Frosting:
1 cube softened butter
1 8 ounce package cream cheese 
1 box powder sugar
2 teaspoons vanilla
1/2 cup chopped walnuts to decorate

This morning I enjoyed a slice with my Earl Grey tea,
which I must say was a lovely combination.
Delicious!

Delicious! That's almost the same recipe as the one I use - although I add raisins along with the walnuts. Extra moist and yummy!

My favorite cake ever - but only when home made - your home or mine sound good!

I have carrots and walnuts on hand - perhaps I'll find time to whip one up later this week - and even tilted it will be delicious like your version I'm sure Marilyn!

Thanks for sharing your recipe - I LOVE carrot cake and cream cheese frosting but haven't made one in ages. I need to do that soon - mouth watering yummy looking.

Oh, I actually *do* think it looks perfect! I've been seeing lots of photos of cakes with that sheer, barely-there layer of icing, and I just *know* I'd manage to clunk it up. Yours is gorgeous!
